Quinoa Power Salad
Hi friends, on my trip to Rajasthan, I finally learned to make Posto Dana Kheer — a traditional recipe where you extract milk from poppy seeds and cook it with millets. 
It’s rich, smooth, and so nourishing — but also surprisingly simple to make. This kheer is my husband’s favorite, and our lovely neighbor Anita bhabhi always makes it for him when we visit. This time, I asked her to teach me — and I’m so happy to share it with you!

They’re actually full of flavor and so easy once you know a few simple tips.
Usually ready in less than 15 minutes — and once you try them this way, you’ll actually start craving them! Today I’m serving it with Kodo Millet and flavorful Lemon Tahini Sauce.

Here’s what went into my roasted Brussels sprouts bowl — simple, fresh, and so good!
For Roasting Brussels Sprouts:
    •    1.5 pounds Brussels sprouts (about 40 pieces)
    •    3 tablespoons extra virgin olive oil
    •    1 teaspoon salt
    •    1 teaspoon freshly ground black pepper
For Lemon Tahini Sauce:
    •    1/2 cup tahini
    •    1.5 tablespoons fresh lemon juice
    •    2–3 garlic cloves, crushed
    •    1/2 teaspoon roasted cumin powder
    •    Salt to taste
    •    1/2 cup cold water (add gradually to adjust consistency)
    •    Optional: a small drizzle of maple syrup or agave for a hint of sweetness
Additional Ingredients for Building the Bowl:
    •    1/2 cup charred or roasted corn
    •    1 cup cooked Kodo millet
    •    1 fresh green chili, finely chopped
    •    Fresh lemon wedges
    •    Chopped cilantro for garnish
